For those of you who have accepted our June Challenge of eliminating the four whites from your diet (white flour, white sugar, white rice, white potatoes *and also monitoring white salt intake), we will be posting meal and snack ideas to help you stay on track. Remember, the first few days will be the toughest as your body is withdrawing. Stay strong! Soon your body will be craving foods that fuel your body, not fight it. Today's recipe will make a great lunch or dinner! Sweet Potato Chickpea Bowl Makes 1 serving - Takes 15min to prepare WHAT TO USE: 1 medium sweet potato 1 cup broccoli 1/2 cup chickpeas 1/4 avocado 1 Tbsp lime juice 1/2 tsp cumin 1/2 tsp black pepper 1/2 tsp chili powder HOW TO USE IT: 1. Microwave sweet potato for 7 minutes or bake in oven. When cool enough to handle, mash into bowl. 2. Gently steam broccoli and add to bowl. 3. Top with chickpeas, avocado, spices and lime juice.
